Plan Thanksgiving with “Creation Care” in mind. Emphasize plant-based main or side dishes (mushroom stroganoff is seasonal), or look for a humanely raised turkey. Use veggie trimmings for soup broth. Browse a charity thrift store for new-to-you autumn decor, cloth napkins, serving dishes, and containers to send leftovers home with your guests. Freeze the remaining leftovers for use later, or convert to a new dish, such as thinning mashed potatoes with milk and seasoning for potato soup.
And don’t forget to start your meal with a prayer of thanksgiving for the intricate web of life that sustains our every moment. In return the Earth will thank you!
